Summer Salad

"This salad is super easy with four ingredients - tomatoes, fresh mozzarella, basil and balsamic vinegar. We had it at a "Wine Bar" restaurant and liked it so much, I copied it."

  • Dice tomatoes.
  • Cube Mozzarella Cheese.
  • Mince Basil.
  • Mix and put under broiler until cheese begins to melt.
  • Splash on Balsamic Vinegar to taste.

  1. Had a box of oval tomatoes, slightly larger than grape, which were no on the banned list. Cut them in half, had LOTS of fresh basil in my herb barrel which I chiffonaded, and 2 slices of fresh mozzarella - diced. Broiled in toaster oven for about 8 minutes, and used a heavy hand with balsamic. This was a nice side to crab cakes and egg-potato salad. Thanks for posting.
     
  2. Yum! This recipe couldn't be easier to prepare; and it's a wonderful way to use the extra tomatoes and basil from the summer garden. My teens loved this with sliced french bread while I finished dinner!

I'm a country lawyer who's discovered the fun of cooking. It's my (very small) creative side coming out.
