- 453.59 g rotini pasta or 453.59 g campanelle pasta
- 236.59 ml ricotta cheese, part-skim
- 59.14 ml feta cheese, crumbled
- 2.46 ml lemon peel, freshly grated
- 1.23 ml salt
- 1.23 ml pepper, freshly ground
- 118.29 ml fresh parsley leaves, chopped
- 118.29 ml fresh mint leaves, chopped
- 118.29 ml fresh basil leaf, chopped
- 4 plum tomatoes
directions
- Heat large covered saucepot of salted water to boiling on high. Cook pasta as label directs.
- Meanwhile, in bowl, combine ricotta, feta, lemon peel, and 1/4 tsp each salt and freshly ground pepper.
- Reserve 1/3 cup pasta cooking water. Drain pasta and return to saucepot.
- Stir reserved cooking water into ricotta mixture, toss with pasta to coat.
- Stir in herbs and chopped tomatoes.
- Enjoy!

I like to experiment when I cook and find that I rarely follow a recipe as it is written.
