  1. Heat oil in large non-stick skillet or wok and stir fry broccoli and zucchini for five minutes.
  2. Add tomatoes and peaches.
  3. Cover and cook 3 minutes.

Oh Boy, is this good! It was so nice along side of a Potato Gnocchi with Squash recipe#116092 dish...a very tasy dinner indeed! It was not noted if the peaches should be peeled or not but I did blanch for about 21/2 minutes and removed the skin. I left the zucchini unpeeled for crunch. I also seeded a large tomato thinking that the peaches would give off enough liquid to keep this dish moist. Well, the dish had moisture but next time I will keep all the juices from the tomato. Thanks, Dancer, for a lovely addition to my family of great side dishes!
