This is a great summer sandwich I created one day. I just added my favourite foods together, and it's healthy too. Bread can be toasted for a warm treat.
- 2 slices whole wheat bread
- 1 tablespoon mayonnaise
- 1 avocado
- 1 cup cooked chicken breast, chopped
- 1 cup lettuce, shedded
- 1⁄4 cup scallion, chopped
- Spread the mayonaise on one slice of bread, and a reasonable serving of avocado on the other.
- Add the chicken, lettuce and scallions and enjoy.
