Another recipe from my mother, a lovely winter pudding. Comfort food at it's best!

Directions

  1. To make the sauce put sugar, butter and water in pan and bring to boil.
  2. Put aside.
  3. Cream butter and sugar.
  4. Add egg and vanilla essence and beat well.
  5. Sift in dry ingrediants and add sultanas.
  6. If dry may need a little milk.
  7. Put the hot sauce into pudding dish, spoon cake mixture on top.
  8. Bake at 350 deg F for approx 45 mins.
  9. Serve with cream or ice cream.

Wonderful recipe! It is exactly like the one passed down to me from my great-grandmother (from her mother) with one exception: the ingredients list read "butter the size of an egg, 3 teacups of flour, etc." Our family always called it Raisin Pudding, I read somewhere that this recipe originated in the early 1800s. I can well see why it has survived so long. When I was pregnant with my first child, I craved this yummy dish...guess that's why I ended up gaining 50 lbs! The only variation I sometimes make to this dessert is to add some chopped walnuts to the batter.

I cannot in all conscience give this a star rating because my guests were late and in my attempts to keep it warm, it became severely overcooked. It was still very very tasty, and I am going to make it again, but I had to review it for the Pick A Chef event..
