  1. Mix the arugala and watercress with watermelon in a large bowl.
  2. Make the Lemon Caper Vinaigrette by mixing the juice of the 8 lemons, rice wine vinegar, and olive oil.
  3. Dress the salad with 1/4 cup of this vinaigrette.
