Sugarless Cookies

"These cookies are great for those who have a sugar restricted diet. I got this recipe originally from "Sugarless Cookies (For Diabetics) Recipe Recipes.eu.com recipe collection". So I listed the ingredients it like I found them. However, to make it a little tastier and with a little kick you can increase the nutmeg to 1 tsp and the rasins to 2 cups."

  • Preheat oven to 375°F.
  • Lightly grease cookie sheets.
  • Mix dry ingredients completely.
  • Add remaining ingredients one at a time, mixing completely.
  • Drop using teaspoon (not measuring spoon) onto cookie sheet.
  • Bake at 375°F for about 12 minutes or until slightly brown on the bottom. Rotate and turn cookie sheets half way through.
  • Cool completely on cooling rack.

  1. I made these for my aunt who can't have any sugar. I was kind of skeptical on how they'd turn out but they were a hit with everyone. My whole family loved them! Will be making these again soon since they are almost gone. Thanks!
     
  2. Wow, I'm impressed with this recipe. The cookies had a great taste! I did change a few things though: Added 1/4 tsp of almond extract to add more flavor, cut down by half the cloves since I'm not a big fan of them. Used 3 tsp of vanilla instead of 1 (depends on how strong is your vanilla extract though, mine is not that strong) I made the unsweetened applesauce using 4 apples and 3/4 cup of water, with 1/4 tsp of cinnamon, cooking them for about 10 min, then mashing them with a potato masher while still warm. This cookies don't spread though, so you have to spread them a little bit before putting them in the oven. The texture too, is a little bit on the soft side, muffin like, I may use butter next time to see how it goes. But overall, great taste, great combination of spices! :)
