Ricotta-based peanut butter pudding...south beach diet friendly.
- 1 cup part-skim ricotta cheese
- 2 tablespoons natural-style peanut butter
- 1 teaspoon vanilla extract
- 2 teaspoons sugar substitute
I ate this almost on a daily basis during the first 2 weeks except I subbed almond butter for the peanut butter. Delicious!!
I added 1 TBSP extra peanut butter for more oomph. Yummy recipe for low carbers! Thanks!
