- 1 (1/3 ounce) package sugar-free orange gelatin
- 1⁄4 cup boiling water
- 1 3⁄4 cups cold milk
- 1 (1 ounce) package sugar-free instant vanilla pudding mix
- 1⁄2 teaspoon vanilla extract
- Combine gelatin and boiling water. Stir until dissolved. Combine milk and pudding mix. Beat 2 minutes with an electric mixer. Add gelatin mixture and vanilla extract. Mix well. Pour into serving dishes or moulds. Chill until firm.
This was very light and refreshing. I made my own recipe of vanilla pudding from the Betty Crocker cookbook and substituted splenda for sugar. I made the recipe the same other than that. We served it with cool whip and it was delicious! Thanks for posting.
Made this for dessert since I had all the ingredients on hand. Made it exactly as written. This was a good, different dessert. The kids thought it tasted like a Sunny D smoothie.
I used the .6 oz size gelatin also. All I could find at the store. I added another 1/4 cup boiling water. The taste was like a creamsicle! I served with a dollop of sugar-free cool whip. Very easy dessert that looks "fancy" and is also healthy! Made for Diabetes Awareness Tag Game.
