    • 1/3 cup chopped walnuts
    • 3 tablespoons unsweetened apple juice concentrate
    • 1 teaspoon baking powder
    • 1/3 cup cocoa
    • 2 cups whole wheat flour
    • 1 1/3 cups unsweetened apple juice concentrate
    • 1/2 cup oil
    • 1 egg white
    • 1 medium banana, mashed

    Directions:

    1. 1
      Soak walnuts in 3 tablespoons apple juice concentrate. Sift baking powder and cocoa into bowl with flour and make a well. Measure 1 1/3 cups apple juice concentrate, oil, egg white and banana into measuring cup and add all at once to dry ingredients and mix.

      Spread in 13 x 9 inch pan sprayed with nonstick spray. Sprinkle with walnuts on batter evenly and smooth nuts into batter with back of spoon. Bake at 350 degrees for 30 minutes. Cover when slightly warm. Cut in 24 servings and store in freezer to keep fresh. Yield 24 brownies.

      This recipe stuck out to me because I am trying to live a sugar free life. However I would not recommend this recipe to anyone. The texture was like twice eaten food, and the sweet flavor of the apple juice and the bananas is clearly absent; because of this you get a bitter awful unsweetened cocoa flavor. It left me and my family disgusted and wanting a real brownie!
