    Ingredients:

    Directions:

    1. 1
      Cook sugar and 1/2 cup water in a small saucepan over medium heat, stirring occasionally, until sugar dissolves. Stir in peanuts, and cook 10 minutes or until sugar starts to crystallize on peanuts. Sprinkle pumpkin pie spice evenly over peanuts, stirring to coat. Spread nuts in a single layer on a lightly greased baking sheet.

      Bake at 300° for 30 minutes, stirring every 10 minutes. Cool on baking sheet. Store in an airtight container.

      We LOVED the flavor of these nuts & I liked finding a new use for a little used spice in my pantry. I doubled the batch and the only change I made was adding 1 teaspoon of french vanilla extract per batch when I stirred in the pumpkin pie spice. Even with the double batch it the listed cooking times were very close & doubled the nuts fit perfectly on a half sheet pan. I made these several days ago & am hoping we can stay out the rest until Thanksgiving. I will definitely be making more for my holiday gift baskets. Thank you so much for sharing this recipe! Made for My 3 Chefs '09.
