A vegan substitute for sour cream without corn starch. This recipe is from "Vegetarians in Paradise".
- 1 cup brazil nut, soaked overnight
- 1⁄2 cup water
- 1⁄4 cup lemon juice
- 1⁄2 teaspoon celtic salt
- 1⁄8 teaspoon celtic salt
- Combine nuts, lemon juice, and Celtic salt in a food processor and process until light and creamy, about 3 or 4 minutes.
