This is a Hellmann's Mayonnaise recipe. Haven't tried it, but it looks good.

Ingredients Nutrition

  1. Preheat oven to 350 degrees. Spray 12-cup muffin pay with non-stick spray; set aside.
  2. In non-stick skillet, melt butter over medium heat and cook onion and celery, stirring occasionally, 6 minutes or until vegetables are soft.
  3. Stir in broth and mayonnaise.
  4. In large bowl, pour vegetable mixture over stufing mix and toss to coat. Evenly divide mixture into prepared pan, pressing firmly and mounding slightly.
  5. Bake 40 minutes or until muffins are golden.

Good. I made a few minor adjustments: used only 1/3 cup mayo and added one egg to one 6-oz. package of stuffing mix (Aldi's)and ended up with 7 muffins. Yeah, right, 7 muffins not 6. I put the extra one in a small dish. This makes a nice side dish with little effort. mailbelle,, thanks for posting...Janet
