A great supper or breakfast dish! You can use bacon bits or ham or sausage, your choice or any or all!
- Preheat oven to 400°F.
- Prepare stuffing mix according to directions.
- Spray muffin cups.
- Press 1/4 cup stuffing into bottom and up sides of 9 muffin cups.
- Crack egg into each cup.
- Sprinkle with bacon bits and cheese.
- Bake 20 minutes or until yolks are set.
- Let stand 5 minutes.
These were pretty good, I added hamburger and made a mushroom gravy (we love gravy). There were no leftovers
well I went a bit extreme on these, I sauteed an onion and garlic before adding in the stuffing mix which really took these to another level, this made a wonderful weekday supper served with a side salad and was enjoyed thoroughly and was made for KK's Chef's Pick game, thank you Sus!
These were very tasty and cute too! I loved how the eggs puffed up. The yolks are solid in this so it makes it convenient to carry off with you to work. I reduced the recipe in half but the full recipe would be great if you have several people over. Thank you Susan :)
