This was good. I think the amount of breadcrumbs needed depends on the size of the zucchini. I used a HUGE one from my garden, and could have used more breadcrumbs. We felt this was kind of bland, but when we added some spaghetti sauce, that gave us the extra flavor we were looking for. Great recipe, thanks for posting.

This made an excellant appetizer, we enjoyed it very much. I just did one zucchini for the two of us because we had stuffed eggs also. I will make these again, but next time I will cut the bread crumbs to about half the amount called for; I goofed with the parmesan, I put it on before I put it in the oven, didn't matter , it was still very good! I used white wine for the liquid, very nice flavour! Thanks for posting.
I really liked this but for me it was a bit too heavy on the bread crumbs. I am definitely going to be making this again and experimenting with the breadcrumb ratio :D Thanks for sharing!! :D
