Delicious change to the flavor of yams

  1. 1. Prick the skins of the sweet potatoes all over with a fork, place on a microwave safe plate and bake in the microwave oven for about 6-8 minutes (depending on size) or until tender.
  2. 2. While the potatoes are cooking, mix together the cream cheese, egg yolk, Siracha, spring onions and seasoning in a bowl; towards the end of the cooking time, preheat the oven to 350(°.
  3. 3. When tender, cut the sweet potatoes in half lengthways and, keeping the skins intact, scoop the flesh from the sweet potatoes and add to the cream cheese mixture.
  4. 4. Stir all the ingredients together, and then stuff the mixture back into the skins.
  5. 5. Place potatoes on pan. Dot the tops with butter. Reheat potatoes in oven; serve immediately with sour cream.
