Stuffed Sweet Potatoes

A nice dish to use leftover ham in. I'm not fond of marshmallows so I omit them. Recipe found in compiled Methodist church recipe book from Midland, Texas.

  1. Bake sweet potatoes until soft; cut in half and scoop out pulp. Mash thoroughly, add mustard, salt (omit if limiting sodium), pepper, and sugar. Heat butter with milk until butter is melted; add to potatoes & beat until fluffy. Stir in ham. Pile back into shells & top each with 2 marshmallows.
  2. Bake in moderate oven, 350 degrees, for 20 minutes.
