Stuffed Picnic Loaf

ingredients
- 2 tomatoes, peeled and chopped
- 2 shallots or 2 spring onions, chopped
- 1 green peppers or 1 red pepper, cored and chopped
- 8 black olives or 8 green olives, stoned and chopped
- 1 tablespoon capers
- 1 dill pickle, chopped
- 1 small loaf French bread
- olive oil
- 1 pinch dried basil
- salt, to taste
- fresh ground black pepper, to taste
directions
- Combine tomatoes, shallots, green or red pepper, olives, capers and pickle.
- Cut French loaf in half lengthways and scoop out all the bread.
- Mix the crumbles bread with the tomato mixture, a little olive oil, basil, salt and pepper.
- fill the two empty bread crust shells with the mixture, press together, wrap the loaf securely in aluminum foil (plastic wrap should work, too) and chill.

Made this so that the kids and I could have it for lunch (DH didn't try it because it was just veggies). I omitted the olive oil, because the tomatoes (chose Kumatos) were very juicy. With that and the pickle juice, I figured the olive oil would make the bread to soggy. The one ingredient I added to the sandwich was slices of provolone cheese. It was enjoyed by all... we can't wait until spring when the snow melts so we can take this sandwich on a picnic. Thank you for posting this recipe. Fabulous! The fresh bold taste are so refreshing on a hot day. Also love how low fat and healthy this sandwich is. Made using 4 very small mild green onions, an 8 oz. loaf of sourdough and did not use any olive oil. The tight plastic wrap works so well to hold this together during the slicing of the sandwich. It also makes eating much neater. Will defiantly be making this again. Thanks so much for the post.

Love this idea! It's a delicious combo of ingredients we love...goes together in about 10 minutes and then you just wait. It's a bit tricky to slice if you intend to make the pieces smaller, which I did plan to do at first, the filling falls out pretty easily. Cut into 2 or 3 big pieces works fine. Bring along a sharp serated knife and plates if you're planning to bring it to a picnic. You can really customize the ingredients however you like, I can think of loads of additions I'd like to try.
