Stuffed Peppers With Italian Cheeses

  • In a large bowl combine 1 lb ground beef, parboild or long grain uncooked rice, seasoning to your taste, I prefer a cajun seasoning, worchestershire sauce, chopped onions and bell peppers.
  • In a saute pan brown the beef with all ingredients and drain. Transfer mixture back to pan and add about 2 cups of water bring to a boil and simmer until rice is tender. While rice is cooking blanch your peppers in a pot of boiling water for about 5 minutes.
  • Remove peppers from water and turn upside down onto paper towels to drain. Once rice is cooked poor about 2/3 cup of the sauce into mixture and add cheese and stir.
  • In a baking pan sit peppers upright and fill to your desire. Pour remaining sauce on top of peppers and in the bottom of the pan and sprinkle top with chesse. cover with foil and bake 30minutes.
