Stuffed Mushrooms for a Crowd

- 24 mixed mushrooms
- 157.80 ml butter
- 157.80 ml chopped onion
- 29.58 ml olive oil
- 44.37 ml whipping cream
- 236.59 ml chicken broth (divided 1/2 and 1/2)
- 14.79 ml bread, crumbs
- 118.29 ml parmesan cheese
- 236.59 ml shredded mozzarella cheese
- salt

directions
- Wash mushrooms and separate caps from stems.
- Finely chop stems.
- Finely chop onions.
- Saute onions in oil until transparent.
- Add Stems.
- Cook about 5 minutes.
- Add 1/2 cup chicken broth.
- Simmer until broth evaporates.
- Put caps in a baking dish and lightly brush with melted butter.
- Salt and Pepper to taste.
- Mix all dry ingredients together. (except mozzerella cheese).
- Then, stir in the onions and stems.
- Add whipping cream until mixture becomes paste.
- Fill caps with mixture.
- Pour remaining 1/2 cup of chicken broth into baking pan. (This helps the mushrooms stay steamed and not dry out).
- Top each with shredded mozzerella cheese.
- Bake 15 to 20 minutes at 350 degrees.
- Serve and enjoy.

<p>Hello!! <br />I live in Western Kentucky and work for a Private Label Food Company. We make cookies, crackers, sauces, spreads, drink mixes and nuts. Lots of good things. I travel for my job, so my time is limited in the kitchen at home. <br /><br />Recipezaar is one of my favorite sites. It is a treat for me to find a new recipe and try it out. <br /><br />You can see from my recipe reviews that I switch from yummy high fat treats to lower calorie meals. I have to watch it. Too many of the treats are a no no. (ha ha ) <br /><br />When trying a posted recipe, I make it just as posted. One of my pet peeves on this site is reviewers that change the recipe and ingredients and then give it a bad rating. <br /><br />I have one son. He is 11 years old. He occasionally helps me in the kitchen. His favorite foods are Italian and classic American Diner.</p>
