- 36 small fresh mushrooms
- 1⁄2 medium onion, chopped
- 1⁄2 cup butter
- 2⁄3 cup dry breadcrumbs
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
directions
- Wash mushrooms, remove stems and save.
- Chop stems and saute with onions in butter for 10 minutes.
- Add remaining ingredients, and use mixture to stuff mushrooms.
- Broil 5-8 minutes.
- Makes 36.
- Note: To accompany roast beef, fill 12 large caps for 6 servings.

These are FAB and sooo easy to make! I cut the recipe in half and followed the recipe exactly. I served them to Mike's aunt and cousin who came for a visit. They raved about them too. So tasty, juicy and a snap to make! I broiled them in my pampered chef deep dish baker and they turned out great! Will definitely make these again! Next time, I just might add a bit of shredded cheese for a nice variation. Thanks Bev - this is definitely a keeper and will be on my menu next time I have guests!
