This is a great meal for breakfast or lunch when your on a low carb program. It is a nice change to eggs.
- 10 g spinach leaves
- 30 g leg ham
- 70 g mushrooms
- 30 g ricotta cheese
- 10 g grated cheese
- 2 cherry tomatoes
- Spinach leaves steam or blanch for only 1 minute, chop one stem of mushrooms,
- Ham and cherry tomatoes into a bowl.
- Mx in ricotta cheese, spinach, a little salt and pepper to taste.
- Bake for 5-10 minutes
- Basil to garnish
- This is a lovely companion with fish or chicken as a main dish.
