- 4 ounces lowfat mozzarella cheese
- 3⁄4 lb fresh spinach, steamed
- 2 red bell peppers, sliced lengthwise
- 1 tablespoon balsamic vinegar
- 2 cups mixed salad greens
- 2 tomatoes, sliced
- Flatten fresh mozzarella to 1/2-inch width.
- Layer with spinach and red peppers.
- Roll up jelly roll fashion from longest end.
- Slice and serve with greens, tomatoes slices drizzled with balsamic vinegar.
I tried it for a picnic on sunday and it was gone in a half an hour.
