- 2 lbs lean ground beef
- 1 large potato, raw, then grated
- 1 teaspoon salt
- 1⁄8 teaspoon black pepper
- 1⁄2 onion, grated
- 1⁄4 cup water
- 1 egg
- 1 cup breadcrumbs
- 1⁄2 cup quick-cooking oatmeal
- 1 carrot, grated
- 1⁄8 teaspoon black pepper
- 1 teaspoon salt
- 1 cup water
- 1 dash garlic salt
- 4 tablespoons shortening, melted
- 6 ounces tomato sauce
- 1⁄2 cup water
directions
- Mix first 7 ingredients.
- Spread mixture out in a rectangle to the depth of one inch.
- Mix the next 8 ingredients. Spread on top of the hamburger mixture.
- Roll up like a Jelly Roll, starting on the long side. Seal edge closed. Bake at 350 degrees for 30 minutes.
- Mix tomato sauce and 1/2 cup water and pour over the rolled hamburger. Bake an additional 30-45 minutes.

Variations:
- Place 3 Hard Boiled Eggs (sliced) on top of stuffing before rolling up.
- Parboil potatoes and place around roll before adding sauce mixture.
