Official Contest Entry: Simply Potatoes 5Fix. This recipe is my own idea. We like it because its a fast way to have a stuffed baked potato with out having to bake the potato first making this a healthy dish that is weeknight fast and friendly. Tip: You can use the soft bacon crumbs so you don't have to fry and crumble the bacon

  1. Make the Simply Mashed potatoes as per package directions. Cut up your green onion and garlic. Once the potatoes are done, mix in sour cream, green onions, garlic and bacon. Serve.
