Stuffed Green Bell Peppers With Sausage

We found this recipe on a BBQ recipe website. The Italian sausage and beer make the peppers very tasty, but probably not terribly healthy!

  1. Slice the peppers lengthwise and remove stems, seeds, and membranes. Place in boiling water for 3 minutes (makes for a bit firmer texture at end of baking time -- if you want mushier peppers, leave in longer). Place peppers in a baking pan & lightly salt the inside.
  2. Cook onions & sausage until meat is browned & onions are tender. Add rest of ingredients except the cheese. Bring to a boil, cover and let simmer 20 minutes or until the rice is tender. Stir in 1/2 of the cheese. Fill pepper shells with mixture. Bake at 375 degrees for about 20 minutes. Add the rest of the cheese on top and let stand 3 minutes.
