    Stuffed Green Bell Peppers With Sausage

    We found this recipe on a BBQ recipe website. The Italian sausage and beer make the peppers very tasty, but probably not terribly healthy!

    Directions:

      Slice the peppers lengthwise and remove stems, seeds, and membranes. Place in boiling water for 3 minutes (makes for a bit firmer texture at end of baking time -- if you want mushier peppers, leave in longer). Place peppers in a baking pan & lightly salt the inside.

      Cook onions & sausage until meat is browned & onions are tender. Add rest of ingredients except the cheese. Bring to a boil, cover and let simmer 20 minutes or until the rice is tender. Stir in 1/2 of the cheese. Fill pepper shells with mixture. Bake at 375 degrees for about 20 minutes. Add the rest of the cheese on top and let stand 3 minutes.
