I scaled this down to make 1 onion in my mini crockpot for lunch... it was incredible!!! The filling is creamy and rich, which went perfectly with the sweet vidalia onion. It was a bit fiddly to scoop the inside of the raw onion out, but it is worth the effort if you need a fancy side dish. I also found that it didn't take as long to cook, but I only had one onion so that may have made a difference. For the Make Mine Vegan Challenge for ZWT9 I found Mock Feta Cheese ( Vegan Substitute ) to use in place of the two cheeses in the filling.
