My Mom used to make these when we were kids. Now I make them for my grandkids - they love them. Really quick and easy using leftover mashed potatoes.

  1. Slice hot dogs down the middle (not all of the way through) and place on a cookie sheet.
  2. Scoop mashed potatoes into slits.
  3. Lay a half slice of cheese on top.
  4. Put under broiler or bake at 350F until cheese melts.

While not "gourmet", these were great fun and enjoyed by kids and grown ups. I used leftover potato casserole to stuff my dogs and it was a big hit.
