    Great way to use all the garden cucumbers I get around the end of summer. Any ground meat would work, we use venison burger if we have any left.

    Directions:

      Remove part or all of the skin on cucumbers.
    2. 2
      Cut cucumbers into 2" slices and scoop out the seeds.
    3. 3
      Mix beef, salt, soy sauce, corn starch, onion, & celery in a large bowl.

      Fill cucumber slices with beef mixture.
    5. 5
      Heat oil in a large skillet over medium heat.
    6. 6
      Add stuffed cucumber slices and bouillon, cover and cook for 10 minutes.

      Turn heat down, simmer for another 30 minutes.

      Transfer cucumbers slices to a plate, pour sauce over them and serve.

      I really liked the recipe, but my husband thought it was only okay so the 4 stars is the average of our opinions. I did the recipe with ground deer and the only thing I changed was to leave the salt out because I know that the beef bouillon we have is really salty. It is probably only something I would make when DH can't join me for dinner as he likes other things I cook with ground deer that are less work.
