      Yummy! Great comfort food. I used a brown and wild rice mix, fresh mushrooms sauteed for a few minutes, and 1 Cornish hen. Excellent dinner served with some baby carrots. Easy, moist and delicious. Thanks breezer for yet another keeper. Made for 123 Tag.

      I haven't fixed Cornish Hens for a long time, and wow, do we love these little babes! I only fixed two, becuase it's just me and hubby now that all the kids have left, but this is comfort food at it's best! I didn't salt and pepper the inside of the birds, because I stuffed them with a rice mix that already contained seasoning, since it was in the pantry and I needed to use it up. We loved the creaminess the soup gave it! (I used the 98% fat free Healthy Request.) I made this for ZWT6, but I will be making this recipe again!

      I have a incurable case of 'chickenlepsy'. It's described as having a great love for chicken or as in this case, cornish hens stuffed with wild rice dressing. Made for POTLUCK Tag.

      My husband just loved this! I made my own rice mix, using 1/4 cup wild rice, 1/4 cup brown rice and 1/4 cup whole barley that I coarsely ground. It made more than enough stuffing! I also didn't have the canned mushrooms(I was sure I had some), but it turned out really good anyway! Thanks breezermom! Made for Newest Zaar Tag.

      I tried this tonight for my husband's birthday (submitted photo) and it turned out great. My birds were 24 oz so had to cook it longer than 40 minutes. I used a roasting pan with a cover and removed it for the last 15 to 20 minutes to brown the hen. It was delicious.

      Oh wow this is a fantastic recipe! So delicious, and it's very easy to boot! I used Uncle Ben's long grain and wild rice pilaf mix with the sauteed onions and mushrooms (no celery), and I used a can of cream of chicken and mushroom. My birdies were tiny and I used 2 but had a pile of stuffing left over so I just baked it up separate in a little casserole. This is a definate keeper of a recipe, for sure! Thanks breezermom, this will be made again and again.
