This is a great low-carb snack!
- 8 ounces cream cheese, softened
- 1 1⁄2 teaspoons dried parsley flakes
- 1⁄4 teaspoon dried thyme
- 1⁄4 teaspoon onion salt
- celery rib, cut into 3-inch lengths
- In a small bowl, combine cream cheese and seasonings. Stuff into celery. Cover and chill for at least 1 hour.
Last night watching my family eat popcorn, I decided to try these. They were really good. The celery gave me the crunch and I was craving and the cream cheese made it satisfying. I did add a bit more salt but I was craving something salty. This will probably be my snack of choice. I also plan on serving it at our Thanksgiving family dinner. Letting the cream cheese stand in the fridge overnight really improves the flavor.
Very easy and made a side to a main dish salad. I thought the mix would have benefited from some additional spices or herbs and there is lots of room to play with this. It is a very forgiving recipe. Made for Fall '09 Pick A Chef.
I love celery and cream cheese, and this adaptation was great. I also love to mix the cream cheese with organic salsa and use the celery sticks to "dip" with! Thanks!
