Stuffed Baked Potatoes

These were very good. I used vegetable cream cheese and it added a very nice flavor. My husband really like them too.

  1. Heat oven to 400°.
  2. Scrub potatoes and wrap in foil.
  3. Bake for 1-1/2 hour, until tender.
  4. Cool.
  5. Cut potatoes in half lengthwise and scoop out the pulp.
  6. Mash the potato pulp with butter,salt, pepper, and cream cheese.
  7. Place back in potato skins.
  8. Reduce oven temperature to 350°.
  9. Place in baking dish and bake for 30 minutes, until heated through.
  10. Sprinkle with paprika.
