  • Spray 9x13" dish with cooking spray.
  • Cut or rip bread into smaller pieces and spread in pan.
  • Whisk pumpkin, eggs, milk (I use almond milk), sugar, flavorings , salt and spices.
  • Pour mixture over bread, pushing bread down so it all soaks up the good stuff.
  • Cover and refrigerate overnight (or a few hours).
  • In a separate bowl, mix together streusel topping (flour, brown sugar, cinnamon and nutmeg.
  • Cut the butter into the flour mixture until pieces are pea-size.
  • Cover and refrigerate.
  • An hour before serving time, preheat oven to 350 degrees.
  • Uncover bread mixture and top with streusel mixture.
  • Bake for 50-55 minutes until set and golden brown.
