Directions

  1. Slice or mash strawberries; place in a bowl.
  2. Add 2 tablespoons sugar and set aside.
  3. In another bowl, combine flour, baking powder, salt and remaining sugar; cut in butter until crumbly.
  4. In a small bowl beat egg and milk; stir into flour mixture just until moistened.
  5. Fill eight greased muffin cups two thirds full.
  6. Bake at 425 degrees for 12 minutes or until golden brown.
  7. Remove from pan to cool on a wire rack.
  8. Just before serving, split shortcakes in half horizontally.
  9. Spoon berries and whipped cram or ice cream between layers and over the top.
