My mom sent me this recipe and I ate a lot of it when I was pregnant. Craved both main ingredients.
- 4 cups chopped rhubarb
- 3 cups sliced strawberries
- 1 1⁄2 cups sugar
- 6 tablespoons quick-cooking tapioca
- 1 teaspoon grated orange rind
- Mix all ingredients in a bowl.
- Then place then in to a pie plate on top of a crust.
- Bake for 10 minutes at 400 degrees.
- Then bake for roughly 35 minutes at 350 degrees.
- Let stand.
