I make this for my husband because he is diabetic and it is 1 of his fav's...I love it too!!!! I have served it to many guest and they never have a clue that it is sugar-free and it is loved by all!!!Thanx for sharing this wonderful recipe....
Taylor, I wish I could give this recipe more than 5 stars. My husband and I really enjoyed this pie. For this recipe, I used a Diet Sierra Mist, but the next time I make this, I'm going to make it w/a diet strawberry soda (just to see how it tastes). A few things I wanted to mention here....when cooking the cornstarch w/the diet soda, I cooked it over a medium (to medium-high heat) for about 5 minutes, and after adding the jell-o, I noticed the jell-o didn't dissolve very well, so then I cooked it over medium heat for a couple minutes; stirring it continuously. And after adding the strawberries, (and carefully stirring the fruit for a minute or two) I let the strawberries set in the pan for a few minutes, before adding them to the pie shell. This helped to cool the berries down a bit. I chilled the pie in the fridge for 3 hrs & 30 mins. One other thing I wanted to mention....after a couple days in the fridge, I did notice that the graham cracker crust does softened up a lot. Our's became a bit soggy, so I'd be sure to eat this pie within a day or two. Thank you Taylor for posting this delicious pie recipe. It's a keeper!!
I made this for my uncle who is a newly-diagnosed diabetic. This was extremely sweet for my taste. My uncle said he liked it, though he only took a few bites; mostly just the crust. I used diet sprite, 4cups of strawberries and sugar-free lady fingers. I didn't have time to make a pie crust and couldn't find a ready-made graham crust that is sugar free. I thought the lady fingers were a good substitute as it subdued the sweetness a bit. Since there is no way to control the sweetness in this recipe, unfortunately, I won't make it again.
Wonderful if you're looking to avoid sugar! I made this without the crust and everyone scraped their dish clean. I do recommend refrigerating it for at least an hour so the jello can set. One time I made it I didn't have time to and I was hoping the jello would set up anyway. It didn't, but everyone still ate it. Excellent recipe! Thank you!
