The pie itself is very tasty and healthy, too! However mine did not set, even after overnight in the fridge. The crust didn't hold together and stuck to the pie dish, and the filling was runny and had to be spooned out. Maybe the pie actually needs to be frozen instead of refrigerated? This is really *very* good. I made it about 22 hours ahead, and I started to worry about the bananas going brown, but I guess that is what the lemon juice was for. The pie looked great, even after all that time in the fridge. I also worried that the dates in the crust would overwhelm the filling, but I was wrong about that too. (Can you tell I've never made anything quite like this before?!) The crust and filling and whole thing was just wonderful and perfect.
