This sounds so simple and good. You could sub about anything crunchy for the bottom layer. It would also be great with blueberriesor whatever fruit you could think of.
- 1 quart strawberry
- 1 teaspoon sugar
- 1 cup gingersnap crumbs or 1 cup graham cracker crumbs
- 2 cups nonfat Greek yogurt
- 4 tablespoons honey
- 1 teaspoon cinnamon
- Hull and quarter the strawberries then mix with sugar. In 4 parfait cups put 1/4 cup of crumbs, then top with 1/4 of the berries.
- In a small bowl mix the yogurt with honey and cinnamon. Put 1/4 of yogurt mixture over the berries and serve.
