Outstanding. Mine fit in 4 3.5" x 5" mini-loaf pans. Perfect and moist. I ended up using whole milk instead of heavey cream and it still worked great. I posted my picture!
this recipe has great flavor and was very easy to make. I made it exactly as it says and it made 8 mini loaves. I will be making this again,
Nearly perfect Kittencal! I cut the recipe in half and baked it in one big loaf pan for 40 minutes and it came out perfect! Very moist! I didn't put in walnuts, just extra strawberries, but I don't really like nuts much anyway. Can't wait to try this with blueberries or raspberries! This is just what I was looking for with the applesauce!
I just had to try this recipe, but I used fresh blueberries in place of the strawberries. These have to be the most wonderful moist little cakes, and they rise really high. I actually made mine also in 4 mini pans, I thought that three pans would be too full. I love these! thank you my friend for another great recipe!
These yummy loaves are fantastic! I meant to cut the recipe in half, but forgot. This turned out to be a good thing: I got 4 mini loaves from this recipe and they were such a HIT with my dinner guests tonight that I had to send them home with their own loaf, so I'm glad I got 4! One word of caution: when I added the applesauce/cream mixture to the batter, it looked horribly curdled. Do not worry if this happens to you too, as I think the applesauce texture causes this. The batter comes together nicely and the resulting loaves are very moist with a lovely crumb. I did find these took 40 minutes to test done. The only thing I did differently was to take a spoonful of the flour mixture and toss it with the nuts, so they wouldn't sink to the bottom during the baking. Thanks for posting; I know I'll be making these a lot.
