I'm loving this gluten free, dairy free Strawberry Lime Shake made of fresh coconut milk. My boys love it too. After I took a picture of the shake yesterday and placed it in the fridge, the boys grabbed it greedily and drank it all down. - 1 1⁄2 cups coconut milk
- 1 (10 ounce) package frozen strawberries
- 1 tablespoon lime juice, freshly squeezed
- 1 tablespoon coconut oil (optional)
- Place all ingredients in a Vita-Mix and puree on high speed until smooth.
DD (toddler) loves this!! Ours definitely needed some type of sweetening. I used date syrup. I want to reiterate what someone said on your site here. It is very important to use organic frozen strawberries as strawberries are one of the fruits with the most pesticides. Saying that I believe I used a bad quality frozen strawberries and maybe that's why it required the sweetener. I used a full fat good quality organic canned coconut milk and bottled lime juice as that is what I had on hand. I did not add coconut oil.
