directions

• Cut the jelly into squares and place in a saucepan with 150ml water. Gently heat until the jelly cubes have dissolved then remove from the heat to cool.
• Remove the strawberry stems and hull (the green leafy bit and the part where it's attached to the berry). Roughly chop the strawberries and put in the bowl with half the sugar.
• Mash the mixture with a potato masher. Stir the jelly into the mashed strawberry mixture and put in the fridge. Leave until it's cold and just starting to set, about 2-3 hours.
• Stir the strawberry mixture well, then fold in the fromage frais and remaining sugar.
• Transfer the mixture to a clean serving dish and leave to set for about 2 hours.

1. Had to make several substitutions on the ingredients list, but the resulting dessert was GREAT TASTING! I mixed up a 4-serving box of strawberry gelatin & cooled it down for the cool jelly mixture. When it came time to fold in the fromage frais, I used a well-mixed blend of 1/2 cottage cheese & 1/2 plain yogurt ~ Another time I'll try a low-fat cream cheese, just to see what that's like! Anyway, partner & guests all thought I'd made an OUTSTANDING dessert! Many thanks for posting! [Made & reviewed for one of my adopted chefs in this Spring's PAC cooking event]

Hello there, my name is Ellie and I live and work in Birmingham, UK. I have just purchased my first home with my partner…so it’s a very exciting time for my right now! I am a really fun, happy person (I think so any way!!) and don’t let to many things get me down – life is to sort! Although the one thing that does get my back up, is when people think that because me and my partner are young (both under the age 25 at the moment!!) will live off take-ways and ready meals! It’s only because it could not be further from the truth! When I lived at home with my mum, I was brought up on home cooked food, as was my partner – so it is something that I feel very strongly about. I shocked quite a few people when we first started living together, I know this seems a bit sad…but it made me feel so proud!! At the moment me and my partner live in a rented home with are 2-year-old Staffordshire bull terrier. I cannot wait to get into our new house, and make it feel like home!! I work as a PA and must admit I love my job! The people here are so friendly it’s a lovely pace to work, I really do think you have to enjoy your job otherwise theses no point?
