All I can say is Yummm! The day was hot and the salad ice cold and so refreshing. Who would have thought strawberries and cucumbers could work so well together. I did make one small change I used rice vinegar in place of apple cider vinegar.
Really good, made it without the sesame oil, and added spinach. Turned out great! Will make again!

This was easy to make. I substituted seasoned rice vinegar for apple cinder vinegar. I used English cucumbers and sliced them with skin unseeded. I mixed all ingredients including oil and tossed it with the cucumbers and chilled the salad until ready to serve and then added the strawberries. The dressing has a lovely subtle flavor. I will make this often. Canâ€™t wait to serve it to company.
Delicious! Very light and tangy and so different. We loved it and had it as a side with roast and potato wedges.

What a wonderful and unusual salad! I made this as a side dish for a barbeque and everyone loved it. The cucumber and strawberries compliment each other well, and the sesame oil is a delicious accent. I plan to make this often!
This is excellent if you are on South Beach or other low-carb diet. I substituted the brown sugar for Splenda for myself but made the recipe exactly for my girls and DH. It is very, very good. Thank you Happy Harry.
