Directions

  1. Melt butter in a pan.
  2. Remove and mix in the biscuit crumbs.
  3. Press into 9" deep pie plate, allowing it to come up the sides.
  4. Cook for 2 min on high.
  5. Allow to cool.
  6. Beat cheeses, sugar and vanilla until smooth.
  7. Add eggs.
  8. Beat well then fold in the lemon rind and juice.
  9. Pour the mixture into the crust.
  10. Microwave for 8 mins on medium.
  11. Cool.
  12. Beat cream till soft peaks form.
  13. Spoon it on the cheese cake.
  14. Decorate with strawberries.
  15. Chill before serving.
