This was wonderful! Light and refreshing on a warm summer night and so easy to make. A perfect dessert. I used fresh strawberries - I pulled out 10 oz from a 1 lb pkg and I sliced them and I put 1 Tbsp of sugar on them along with a couple of Tbsp of water to make a syrup. Came out perfect. The only thing I would do different next time is use the entire 1 lb pkg of strawberries! Another thing I might do next time is use a chocolate crust. LOVED LOVED LOVED this pie. At Pokeno last night we had a choice between chocolate cake and this pie (actually we could have had both). Since I'm a big fan of anything strawberry I chose the pie and I chose it again when I went back for a second small slice - LOL. After the first bite I knew I had to have the recipe and it's exactly like this one. Our hostess used regular cream cheese instead of light so I'm not sure if that made much of a difference. But, I do know it was very creamy and reminded me of a cross between strawberry yogurt and strawberry ice cream. I have made this a few times for Easter dessert. It's delicious! I was wanting to make it again this year, but couldn't find the recipe.
