Strawberries what else can you say!!!!!
- 1⁄3 cup apricot jam
- 3 tablespoons water
- 1 teaspoon cinnamon
- 2 pints strawberries, stemmed and diced into 1/4 inch squares
- In a medium bowl, whisk jam, water and cinnamon; add strawberries.
- Toss gently to combine.
- Serve salsa over pancakes, waffles, French toast, hot cereal, or mix into plain yogurt.
- You could warm this up a little if you prefer.
This was a very good salsa! I used strawberry jam instead of the apricot as none of use care for the apricot jam and didn't want to buy an ingredient that would just sit in the fridge for months and be eventually thrown out. My mother said this salsa would go great with the Cinnamon Chips in Annie's Fruit Salsa and Cinnamon Chips. Thanks Rinder for a great simple tasty recipe and was a great appetizer for our family's Easter brunch!
