This recipe has been entered for ZWT II & was found on the net courtesy of The Straits Cafe at: straitscafe.com. Per the intro ... "Tofu for dessert? Well, you've never had a treat like this!" I don't know how a recipe could be any easier than this, but plan ahead as this needs to chill overnight. The 5 min prep time of course doesn't include the chilling time. :-)
- 354.88 ml firm tofu (cubed)
- 354.88 ml strawberries (sliced)
- 1 banana (sliced)
- 4.92 ml vanilla
- 14.79 ml lemon juice
- 1.23 ml salt
- 29.58 ml honey
- In a blender, combine all ingredients & blend till smooth & creamy.
- Pour into individual serving dishes or pudding glasses & chill overnight.
Yum! I used frozen berries that I thawed a bit. One cup strawberries and a half cup blueberries. Left out the banana because I didn't have one but added some banana flavored extract. I'll try this again with strawberry and maybe some cocoa powder. Sweetened this with splenda for dietary restrictions. Great flavor pudding that the kids and picky husband loved.

Quite tasty! I used the tofu that comes in a tub (Nasoya) which is somewhere between firm and silken. My strawberries had been frozen. Also reduced the sweetener, using just 2 tsp each of agave nectar and maple syrup- couldn't resist adding a little maple-ness! My family all loved it as part of our Thanksgiving dessert. Thanks!
