I have not tried this recipe. I got it from Cherished Recipes Waterman Conservation Education Center. The recipe was submitted by Chris Brothers.
- 3⁄4 cup sugar
- 2 eggs
- 1 cup mashed strawberry
- 1 cup mashed banana
- 1 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 2⁄3 cup Crisco
- 1 teaspoon vanilla
- 2 cups flour
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon baking powder
- Cream sugar, crisco and eggs. Mix in vanilla and strawberries and bananas.
- In another bowl, combine dry ingredients.
- Add to strawberries mix and blend.
- Bake in greased bread pan at 350 for 1 hour.
I made this recipe as written and the family loved it! It was a great way to use up an overabundance of both strawberries and bananas that wasn't the usual smoothie. I thought, however, that the flavor of the strawberries got a little lost. I may try adding a strawberry glaze next time.
I didn't care for this bread ... it was rubbery. The flavor wasn't bad however.
the batter was really nice and fluffy. i just sort of squished my strawberries by hand, since i wanted some chunks. i also added a little bit of lemon flavoring. this was a very nice and moist bread, something different. thanks! wish i could take a pic of it but my son threw my camera into the cat water bowl so i'm without for right now!
