Strawberry and Cranberry Coulis

READY IN: 8mins
Recipe by Boomette

A recipe from Qu'est-qu'on mange Volume 2. I made this recipe a few years ago and it was really good. Perfect on vanilla ice cream on angel food cake. If you want, omit the cranberries and use 2 cups of strawberries.

Absolutely loved the combo of strawberries & cranberries here & would happily make this again ~ In fact, I've made a note to include this as one of the items to make for my next batch of end-of-the-year holidays gifts (when I can use fresh cranberries rather than the frozen ones I have on hand throughout the year)! And I'm with you when it comes to NOT straining the perfectly delicious "sauce." Definitely a keeper of a recipe! [Tagged & made in Please Review My Recipe]

Directions

  1. In a saucepan, bring to boil water and sugar. Add fruits and cranberry juice. Let simmer 3 minutes. Set aside.
  2. Dilute cornstarch in a little bit of water. Put in the saucepan. Cook 1 minute, stirring continuously.
  3. Put in blender or food processor, then strain (I didn't strain). Serve cold.
