From a BBC program called Saturday Kitchen. Its very rich, I doubled the strawberries and the balsamic vinegar to suit our taste, feel free to halve it if you think it is nicer.
- 1 lb strawberry, hulled (retain some whole strawberries for garnish)
- 1 tablespoon grenadine
- 1⁄2 tablespoon black peppercorns
- 3 ounces caster sugar
- 2 teaspoons balsamic vinegar
- 1 tablespoon vanilla extract
- 1 tablespoon strawberry liqueur or 1 tablespoon vodka
- 1 cup single cream
- 8 ounces mascarpone cheese
- Place the hulled strawberries and whole strawberries in a bowl and crush lightly with a fork or potato masher, mix with the grenadine and set aside.
- Place peppercorns in a frying pan, dry roast on a stove for a few minutes, allow to cool and then coarsely crush using a mortar and pestle.
- In another bowl mix the caster sugar with the balsamic, vanilla and the liqueur or vodka, mix in the single cream.
- Beat the mascarpone until smooth and mix into the single cream mixture.
- Spoon a little of the crushed strawberries into the bottom of Martini glasses, wineglasses or Knickerbocker Glory glasses. Spoon over a little of the cream mix and sprinkle with some of the peppercorns.
- Repeat until the glasses are full, finishing with the cream and the final sprinkle of pepper.
- Garnish with whole or cut strawberries.
I made this this morning, spooning the individual layers into wine goblets and then covering tightly with Saran Wrap until using this evening after dinner. It was wonderful. I only adjusted the recipe slightly. I added a whole tablespoon of balsamic to the strawberry mixture (instead of 2 tsp.). I sweetened the mascarpone slightly with powdered sugar when whipping it. I also sweetened the strawberry mash with just a tablesspoon of my own vanilla sugar, besides the one tablespoon of grenadine and added just a small splash of balsamic. I used whipping cream instead of single cream (sweetened it just slightly also), and ended up folding the very light whipped mascarpone into it before assembling the recipe. It turned out wonderful. I would probably next time around go a little heavier with the crushed toasted black pepper, as it got a little lost, but then I might have been a little sparing with it. So it could have been my mistake. Which is unlike me, because pepper is probably one of my favorite of the basic spices. Overall, a VERY nice dessert, and a VERY pretty presentation at the table! Oh, and I topped it off with fresh sweetened whipped cream, just for presentation. I sweetened it a little more with a just a tab of the juice from the strawberries, making it a lovely color.
