If you have bacon and eggs in the same recipe, of course you have to fry the eggs in the bacon grease. That is what I did, which added just a little more flavor to an already delicious sandwich. I fried one slice thick cut bacon. Made for - More Than Sauerkraut And Dumplings 2012

My mom use to make this for me as a child, so had to make it again. I can not have cheese so I skipped the cheese step.

Wonderful dish - simple to make and quick to eat. Didn't have any bacon or ham but did have a few bratwursts in the freezer so I quickly cooked them up and sliced them into thin slices. Wunderbar!!! Eggs, meat, and bread - the perfect meal!!!

I've been making something like this for many years, based on a sandwich we used to buy at the corner Greek diner kitty-corner from where I worked. I made this with a lovely ham instead of bacon, and instead of butter - which would have been lovely - I used some horseradish cream I had, which worked so well with the other ingredients. I also topped it with a second slice of toast - just to make it easier to eat!

WOW, what a yummy sandwich! DH and I enjoyed our Strammer Max for lunch, but would also be a wonderful warm sandwich for breakfast or supper. Made with sourdough bread and Swiss cheese slices--DH had his Strammer Max with ham and sunny side up eggs, and I had mine with bacon and eggs over easy. Both are yummy! Danke schon, Mia! We look forward to making the Strammer Max again, very soon. Made for More Than Sauerkraut & Dumplings in the German Forum.
